Zero waste: how do you cook vegetable skins, pods or roots?

What do you do with the tips when you eat radishes or carrots? If you are a ‘recycler’ compost it and if you don’t have the option, throw it in your trash! But did you know that you can make delicious recipes with vegetable tips?

These plants are often thrown away, but they are full of vitamins and minerals and we will not reuse them. Leeks, potato peels or cucumber peels, do not throw them away, cook! Here are some recipes to help you learn how to appreciate this garbage that is, in fact, not garbage at all!

Carrot tops, beets, radishes, beets, broccoli …

We don’t necessarily know, but when we eat the root, the tips are vegetables in their own right. There are three solutions available for vegetable settings: salad dressing, quiches or pies or pesto.

Quiche made from carrots / mushrooms / fresh goat cheese

All you have to do is arrange your carrot tops the way you want or the amount and add the following mixture to your shortbread pastry:

3 eggs 20 cl liquid crème fraîche 25 cl milk

Then put your fresh goat cheese on top … 40 minutes in the oven at 210 °! For the pesto, simply mix your tips with olive oil, parmesan, garlic and some dried fruits (almonds, hazelnuts) … On fresh pasta it is a delight for the taste buds!

Cucumber peels

This vegetable waste isn’t actually cooked. On the other hand, you can season simple water with the addition of lemon juice. It is enough to let the bowls soak in water for a few hours. By the way, the scrubs can be used as a concealer by placing them under the eyes!

Broccoli stalks

You never know what to do with these often tough rods. However, they are cooked like asparagus and have a slightly more pronounced taste. Just dip or steam them in boiling water for a few minutes. A little olive oil, salt, pepper and lemon. Here is an original entry and no waste!

Pineapple rind

In Africa and Guyana, the locals make a beer! It is enough to mix with the rind, the chopped ginger and the water and leave to macerate for between three and four days. Then you have to filter the mixture, add some sugar or cinnamon and enjoy!

Citrus peel

Citrus peel is great as a dessert or simply as water. But they also offer the possibility of making jams or jellies.

An easy to prepare and simply delicious chocolate orangette recipe. For 500 grams of orangettes, do the following:

3 oranges (the peel at the end) 250 g powdered sugar 50 cl water 500 g dark chocolate (at least 70% cocoa)

Wash the rinds very carefully to remove all traces of pesticides if your oranges are not organic! Soak your rinds in cold water, then cook for 5 minutes. Repeat the process once to remove the bitterness from the rind. Drain the rind and let it cool. Cut thin strips of bark, then make a syrup with sugar and water. When the mixture comes to a boil, soak the orangettes for 5 minutes. Melt your dark chocolate in a water bath and immerse the cooled rinds to cover them completely … Let them cool down and enjoy with a coffee, for example!

The pods of peas, broad beans …

These “wastes” are also vegetables in their own right, so they can be cooked as such … Steamed or in water, then returned in olive oil and seasoned like green beans … With parsley, garlic, salt and pepper … Simply good !
